A new world-class gastronomy presents itself with Jordi Cantó and his "Sa Clastra". An elegant restaurant in the historic courtyard of the hotel. Cantó, a young Mallorcan top talent with gourmet experience and a lot of personality, impresses here with his interpretations. The cuisine is inspired by creations from all over the world and Mediterranean cuisine. The "Olivera" under the direction of Chef Pep Forteza creates for its part a culinary spot of a special kind. Pep Forteza uses local herbs and spices in combination with freshly caught fish from Mallorcan waters and meat and vegetables from local farmers.

And speaking of island-grown herbs: Bar manager Roberto Muscaridola, an Italian native of a small village near Naples, can be found on the Castell grounds during the day armed with a basket, knee-deep in a sea of plants. There he picks rosemary, mint, all kinds of spicy flowers, fruits from countless lemon, orange or almond trees. "It all has to be freshly harvested and blooming in the jar," explains Roberto. What the pine trees, fig trees and olive groves offer is reflected in the aperitifs and cocktails.

The bar is located in the former prayer chapel of the estate. Bottles of whiskey, gin, cognacs and liqueurs from all over the world and the best wines of the island now replace the altarpiece there. A little tip to finish: Roberto composes never-before-seen non-alcoholic cocktails, where citrus and ginger become protagonists of the senses.
